Lollo Rosso Asian Pear Salad with Persian Lime Pomegranate Vinaigrette
Ingredients:
- 3 bunches of lollo rosso lettuce
- 1 bunch of frisée lettuce (using yellow inner leaves only)
- 1 pear, thinly sliced
- A handful of pomegranate seeds for sprinkling
- 3 tbsp pomegranate juice
- 2 tbsp champagne vinegar
- 4 tbsp lime-infused olive oil
- 2 tbsp extra virgin olive oil
Instructions:
1. Mix vinegar and pomegranate juice together.
2. Whisk in both olive oils. Season with salt and pepper.
3. Dress the lollo rosso lettuce with the vinaigrette.
4. Dress the frisée lettuce and pears separately with a little splash of olive oil, champagne vinegar, and salt (to prevent
the lettuce from turning pink).
5. Plate the lettuce together with the pears and sprinkle pomegranate seeds on top.
6. Drizzle the pomegranate vinaigrette around the plate.
