Yellow Swiss Chard Salad
Ingredients:
The Dressing:
- 1/3 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp dried oregano
- 1/2 tsp salt, or to taste
- 1 tsp honey
- 1-2 oven-roasted garlic cloves, minced and smashed into a paste
- Generous pinch of pepper, or to taste
The Salad:
- 1 large head of romaine lettuce, washed, dried, and chopped
- 1/4 cup fresh parsley, finely chopped
- 1/2 cup pitted green olives
- 1/2 cup crumbled feta cheese
- 4-5 fresh basil leaves, torn up
- 1 small cucumber, chopped
- 1 celery rib, chopped
- 1 cup cherry tomatoes, halved
Instructions:
The Dressing:
1. Combine all the dressing ingredients in a mason jar.
2. Cover and shake vigorously.
3. Refrigerate until ready to use.
The Salad:
1. Combine all salad ingredients in a large mixing bowl.
2. Toss well to combine.
3. Shake the dressing one final time before pouring it over the salad.
4. Toss the salad again to ensure it is well coated. 5. Transfer the salad to a serving platter and serve immediately.
